Ingredients
- Sea Bass 6 pieces
- Soy Sauce 2 spoons
- Sherry 2 spoons
- Peanut Butter 1 tablespoon
- Sesame Oil 3 spoons
- Lard 5 oz
- Ginger 0 oz
- Soy Sauce 1 tablespoon
- Sugar 1 tablespoon
- Lime 2 pieces
- Onion 2 spoons
- Scallions 0 oz
- Cilantro 0 oz
Step-by-Step Guide
Step 1
Clean the fish, removing the innards and gills. Mix light soy sauce with sherry, one tablespoon of peanut butter, two tablespoons of sesame oil, and grated ginger. Rub this mixture over the fish inside and out and let it marinate in the refrigerator for ten minutes.
Step 2
Then place the fish in the steamer and cook according to the specifications of your particular steamer — usually for about fifteen to twenty minutes.
Step 3
Meanwhile, fry the sliced bacon until crispy. Mix dark soy sauce, sugar, lime juice and zest, finely chopped onion, cilantro, and onion oil (prepare in advance and it can be stored in the fridge for a week; boil 500 grams of sliced green onions in 300 ml of peanut oil over low heat for half an hour). Add the crispy bacon to the sauce.
Step 4
When serving, drizzle each fish with the sauce, ensuring an even distribution of the cracklings.
