- Lemon 2 pieces
- Saffron a pinch
- Salt to taste
- Wheat Flour 10 oz
- Beer 5 fl oz
- Butter 3 tablespoons
- Grated Pecorino Pepato Cheese 3 tablespoons
- Vegetable Oil 0 qt

Step 1
Cut the fish into cubes and marinate in salt, lemon juice, and saffron for one hour. Whisk half of the flour with the beer, add the cheese, and gently mix in the butter — the batter should be thick and flowing.
Step 2
Heat the oil. Dip pieces of fish on a fork in the flour, then into the batter, and fry until golden brown.
