Gerasimov-Style Dumplings
Ingredients
- Wheat Flour 3 cups
- Chocolate eggs 2 pieces
- Lamb 10 oz
- Pork Blood 10 oz
- Bone marrow bones 5 oz
- Ground Black Pepper to taste
- Salt to taste
- Bay leaf 3 pieces
Step-by-Step Guide
Step 1
Sift the flour, mound it up, make a well in the center, and pour in salted water and eggs. Knead the dough and let it rest for 20–30 minutes covered with a towel to prevent drying out.
Step 2
Meanwhile, prepare the filling for the dumplings. Pass the lamb, pork, and bone marrow through a meat grinder. Season the filling with salt and pepper, and mix thoroughly.
Step 3
Roll the prepared dough into a log and cut it into pieces, then roll each piece into small thin circles - the bases for the dumplings. Place 5–10 grams of filling on each, shape the dumplings, and drop them into boiling water.
Step 4
Add salt and pepper, bay leaves, and cook the dumplings until done, until they float to the surface. Serve the Gerasimov-Style homemade dumplings with butter, sour cream, or vinegar on the side, as desired.
