  • Oyster Mushrooms 20 oz
  • Onion 0 oz
  • Garlic 0 oz
  • Tarkhuna Syrup 0 fl oz
  • Cilantro 0 oz
  • Dry White Wine 0 fl oz
  • Svan Salt 0 oz
  • Vegetable Oil 0 fl oz
  • Ground coriander 0 oz

Step-by-Step Guide

Step 1

Preparation: Dissolve salt and sugar in water. Squeeze the juice from the lemon into the water and add it as well. Add the remaining spices. Mix well. Coat the duck and refrigerate for 12 hours.

Step 2

Wash the oyster mushrooms and trim the roots.

Step 3

Dice the onion finely and grate the garlic on a coarse grater.

Step 4

Sauté the mushrooms in vegetable oil with the onion and garlic until partially cooked.

Step 5

Add the white wine and simmer until fully cooked.

Step 6

Season to taste with spices, then let cool.

Step 7

Stuff the marinated duck with the prepared mushrooms, coat with a mixture of red adjika and oil (10 g adjika / 20 g oil), and bake in the oven for 50 minutes at 355°F.
