Gemistos (Γεμιστός)
Ingredients
- Rice 10 oz
- Breadcrumbs 3 tablespoons
- Tomatoes 5 pieces
- Bell Peppers 5 pieces
- Onion 1 piece
- Garlic 5 cloves
- Tomato Paste 2 tablespoons
- Parsley to taste
- Basil to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut off the tops of the peppers and remove the insides.
Step 2
Cut off the tops of the tomatoes and remove the insides. It is better to use firm, slightly unripe tomatoes for this.
Step 3
Finely chop the insides of the tomatoes. Set aside.
Step 4
Cook the rice al dente, drain immediately, season with salt, and add olive oil.
Step 5
Sauté the onion until translucent, and as soon as it starts to turn golden, crush in the garlic (optional). Sauté together for another 2 minutes.
Step 6
Once the onion and garlic are ready, add the rice, chopped tomato insides, tomato paste, and all the herbs.
Step 7
Simmer until the rice is cooked. If there is not enough juice from the tomatoes, you can add a glass of water or dry white wine.
Step 8
When the rice is ready, meaning it has absorbed enough tomato and has taken on color, remove it from heat and add the breadcrumbs. Stir, cover with a lid, and let it rest in the pan for about 15 minutes.
Step 9
Brush the outside of the tomatoes and peppers with olive oil, and sprinkle the inside with a mixture of salt and pepper.
Step 10
Fill the inside with the mixture from the pan, but not too tightly, otherwise the vegetable walls may tear and not cook through.
Step 11
Place parchment paper on a baking tray. Arrange the vegetables on it.
Step 12
The oven should be preheated to a high temperature of 250-300°C (482-572°F), place the tray in the middle, and cook for about 30-40 minutes (depending on the size of the vegetables). You can check readiness by the browned crust of the rice.
