Gemelli pasta with garlic and cauliflower
Ingredients
- Olive Oil 1 cup
- Ground Cumin 2 teaspoons
- Garlic 3 cloves
- Cauliflower 1 head
- Coarse Salt to taste
- Ground Black Pepper to taste
- Gemelli pasta 10 oz
- Chopped almonds 5 oz
- Light Raisins, Seedless 5 oz
- Chopped Sage Leaves 2 tablespoons
- Citrus Zest Mix 2 pieces
- Meyer Lemon Juice 0 fl oz
- Breadcrumbs 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 260˚C (500˚F). Combine the cauliflower with 1/4 cup of oil, cumin, garlic, salt, and pepper, and spread it on a baking sheet. Roast for 25-30 minutes until tender and golden brown.
Step 2
Meanwhile, bring salted water to a boil in a large pot. Cook the pasta for about 13 minutes until al dente. Drain and set aside.
Step 3
Combine the cauliflower with the remaining oil, pasta, almonds, raisins, parsley, lemon juice, and lemon zest. Season with salt and freshly ground black pepper. Serve topped with breadcrumbs.
