Ingredients
- Carp 5 lbs
- Onion 3 pieces
- Carrot 1 piece
- Stale Bread 10 oz
- Milk 5 fl oz
- Chicken Egg 5 pieces
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Clean the fish, rinse it, and cut it into portion-sized pieces.
Step 2
Carefully remove the fillet meat and bones without damaging the skin.
Step 3
Soak the white bread in milk or water, then squeeze out the excess.
Step 4
Stuff the fish skin with the prepared filling.
Step 5
Prepare the broth: place the heads, bones, tails, one onion, salt, and peppercorns in a pot.
Step 6
Pour vegetable oil into the bottom of a pot, add thinly sliced carrots and 1 onion. Place pieces of stuffed fish on top, followed by another layer of vegetables.
Step 7
Place a bay leaf, whole peppercorns, and sugar on top. Pour in the broth until it completely covers the fish.
Step 8
Simmer for 1.5 to 2 hours over low heat.
Step 9
Place the cooked fish on a serving dish, pour over the strained fish broth, and refrigerate to set.
Step 10
Serve chilled, with mustard or horseradish.
