Galician Beans
Main Dishes • Spanish
Description
Instead of turnip, you can use savoy cabbage.
Ingredients
- White Beans 10 oz
- Beef Shank 2 pieces
- Turnips 20 oz
- Salt to taste
- Pork fat 1 tablespoon
- Ham 5 oz
Step-by-Step Guide
Step 1
Place the beans in a pot, cover with cold water so that it covers the beans. Bring to a boil and drain. Add cold water to cover the beans, bring to a boil, then reduce the heat and let simmer for 25–30 minutes. Drain all the broth.
Step 2
Put the ham, shanks, turnip, cabbage, and pork fat into a large pot. Add enough water to cover all the ingredients. Bring to a boil and, reducing the heat, cook for an hour. Add the beans, cook for another half hour, and serve hot.
