Ingredients
- Wheat Flour 2 cups
- Safflower Oil 5 fl oz
- Light Beer 5 fl oz
- Onion 1 piece
- Garlic 2 cloves
- Orange Bell Peppers 1 piece
- Cilantro to taste
- Eggplants 1 piece
- Young zucchini 1 piece
- Tomatoes 6 pieces
- Thyme to taste
Step-by-Step Guide
Step 1
Make the dough. Mix the sifted flour with the oil, then add the beer. Knead the dough. Let it rest while preparing the rest.
Step 2
Make the sauce. Mix finely chopped onion, pepper, garlic, and herbs. Add salt. Blend until smooth in a blender on pulse mode, but do not turn it into a puree; just ensure everything is finely chopped.
Step 3
Roll out the dough, spread the sauce on top, then layer the vegetables: zucchini/eggplant/tomato. I pre-grilled the eggplant. Sprinkle with sweet paprika, add salt, and drizzle with oil. Bake in the oven for about 30 minutes at 200°C (392°F). Optionally, 10 minutes before it's done, you can brush the top with a paste made from crushed garlic, olives, and olive oil.
