Step-by-Step Guide
Step 1
Prepare the chicken: remove the skin and separate the meat from the bones. The bones can be used when making broth.
Step 2
Take cheesecloth or another type of fabric. Place the skin from 1-2 legs on it.
Step 3
Prepare the filling: cut the meat into pieces, dice the ham, add the pistachios, season with salt, add nutmeg, and pepper. Mix everything together by hand.
Step 4
Place the resulting filling onto the skin, roll it up along with the cheesecloth. Tie the ends with kitchen twine and form it into a sausage shape.
Step 5
Take a pot of water and add vegetables: onion, carrot, celery, leek, parsley, black peppercorns, allspice, and salt. Add the sausage and simmer for 1 hour and 20 minutes.
Step 6
Remove the galantine from the pot, rewrap it in plastic wrap, tie it with kitchen twine, and place it in the refrigerator for about 8 hours.
Step 7
After removing the galantine from the plastic wrap, slice it and garnish with herbs. Serve with mustard or horseradish.
