  • Courgette 1 piece
  • Potato 1 piece
  • Onion 1 piece
  • Chicken Egg 5 pieces
  • Grated Pecorino Pepato Cheese 0 oz
  • Milk 2 tablespoons
  • Garlic 2 cloves
  • Salt to taste
  • Vegetable Oil 2 tablespoons
  • Basil to taste

Step-by-Step Guide

Step 1

Finely chop the garlic, slice the onion into half rings, and sauté in vegetable oil.

Step 2

Peel and chop the zucchini and potato.

Step 3

Add the chopped vegetables to the onion and garlic.

Step 4

Preheat the oven to 430°F.

Step 5

Sauté the vegetables over medium heat, stirring occasionally, until partially cooked (5–7 minutes).

Step 6

Beat the eggs, adding milk, grated Parmesan, and basil.

Step 7

Spread the vegetables in the skillet and pour the egg mixture over them.

Step 8

Cover the 'omelet' with a lid and cook until the bottom is nicely browned, while the top remains slightly runny.

Remove the skillet from the heat and transfer it to the oven. Bake for 10–15 minutes.

Serve sprinkled with black pepper and grated Parmesan.
