Ingredients
- Salad Potatoes 4 pieces
- Greens to taste
- Bacon 6 pieces
- Grated Pecorino Pepato Cheese 3 tablespoons
- Onion 1 piece
- Garlic 2 cloves
- Arugula 5 oz
- Orange Bell Peppers 1 piece
- Russian Cheese 5 oz
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Whisk the eggs, greens, Parmesan, salt, and pepper together.
Step 2
Heat a skillet, chop the bacon, and fry it over medium heat. Transfer the fried bacon to a large bowl, wait a moment, and drain the fat.
Step 3
Chop the potatoes and fry them in the same skillet over medium heat until golden brown, about 3 minutes. Season with salt and pepper. Reduce the heat, cover, and simmer the potatoes for another 3 minutes, stirring occasionally.
Step 4
Transfer the potatoes to the bowl with the bacon.

Finely chop the onion, garlic, and bell pepper.
Step 6
Heat the skillet, add a little oil, and sauté the vegetables for about 4 minutes, then add the spinach or arugula. Mix thoroughly.

Transfer the contents of the skillet to the bowl with the bacon and potatoes.

Pour the beaten eggs over the vegetables, mix, and transfer to the skillet.
Step 9
Cook the frittata over low heat for 2-3 minutes. Use a spatula to make small indentations to allow the liquid to escape. Reduce the heat and cook for another 5 minutes. Remove the lid and sprinkle the grated cheese on top. Cook the dish until done over low heat.
