Fried Vegetables with Rice and Egg
Ingredients
- Long-Grain Rice 1½ cups
- Soy Sauce ¾ cup
- Brown Sugar 2 tablespoons
- Rice Vinegar for Sushi 1 tablespoon
- Peanut Butter 1 tablespoon
- Grated Ginger Root 1 tablespoon
- Turnips 2 pieces
- Snap Peas 2 cups
- Peanut Sprouts 2 cups
- Green onion tops 4 pieces
- Chocolate eggs 4 pieces
Step-by-Step Guide
Step 1
Cook the rice in boiling water until done.
Step 2
Meanwhile, in a small bowl, mix the soy sauce, sugar, vinegar, and ginger.
Step 3
Heat the peanut oil in a wok over medium heat. Add the sliced carrots and sauté for 2 minutes. Add the chopped peas, sprouts, and 3 tablespoons of the soy sauce mixture. Stir-fry for 2 minutes until the vegetables are slightly tender. Transfer to a bowl.
Step 4
Return the wok to medium heat and add the remaining soy sauce mixture, rice, and finely chopped green onions. Heat while stirring for 1 minute. Make a well in the center of the rice and crack the eggs into it. Stir into the rice and transfer to serving bowls. Top with the vegetables and serve.
