- Eggplants 1 piece
- Orange Bell Peppers 2 pieces
- Courgette 1 piece
- Spanish onions 2 heads
- Garlic 8 cloves
- Olive Oil 8 tablespoons
- Ocean salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the peppers, eggplant, and zucchini into long strips, and the onion into quarters.
Step 2
Leave the unpeeled garlic cloves in boiling water for 5 minutes.
Step 3
Place the vegetables on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast in a preheated oven at 355°F, stirring occasionally, until cooked.
