Fried Sea Bass

Ingredients

  • Sea Bass 1 piece
  • Olive Oil to taste
  • Ocean salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

Check that there are no small bones left in the fillet. Make several cuts in the skin of the sea bass, then cut the two fillets in half to create 4 portions. Lightly salt and pepper the scored skin.

Step 2

Heat a non-stick skillet over high heat, add oil to thinly coat the bottom, and wait for it to heat up.

Step 3

Reduce the heat to medium-high, place the fish skin-side down, and cook for 4 minutes until a crispy golden crust forms. Do not shake the skillet or move the fillets — otherwise, the juices will escape, and the skin will start to stick and tear. If the skillet gets too hot, gently slide it, add a splash of cold oil, and continue cooking.

Step 4

Flip the fish and cook for another 2 minutes without moving the fillets. Carefully drizzle hot oil over the cuts in the skin.

Step 5

Serve skin-side up, drizzled with oil from the skillet. Add pepper to taste.
