Fried Sea Bass

Ingredients

  • Sea Bass 5 lbs
  • Cotton Oil 15 fl oz
  • Wheat Flour 0 oz
  • Butter 0 oz
  • Lemon 1 piece
  • Chopped Sage Leaves 1 tablespoon
  • Salt to taste

Step-by-Step Guide

Step 1

Make two shallow cuts on each side of the fish. Season the inside and outside with salt.

Step 2

In a deep fryer or a deep skillet, heat the oil to 180–375°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds).

Step 3

Dredge the fish in flour and fry in hot oil two pieces at a time until golden brown. Transfer the cooked fish to a warmed plate and keep warm while the remaining portions are cooked.

Step 4

Once all portions of fish are ready, drain the vegetable oil from the skillet and add the butter, melting it over low heat.

Step 5

Remove the skillet from the heat and add lemon juice and parsley. Return the skillet to the heat and warm it, stirring the oil with the juice constantly. Drizzle the finished oil over the fish and serve immediately.
