Fried Scallops with Green Peas in Garlic Basil Sauce

Ingredients
- Snap Peas 10 oz
- Scallops 10 oz
- Mirin 2 tablespoons
- Chicken Broth ½ cup
- Corn Starch 1 tablespoon
- Scallions 1 bunch
- Vegetable Oil 2 tablespoons
- Ginger-Garlic Paste 1 tablespoon
- Chili Flakes ¼ teaspoon
- Fresh basil leaves ½ cup
Step-by-Step Guide
Step 1
Boil the peas in boiling water for 3 minutes. Drain and rinse under cold water. Trim the ends and cut diagonally into small pieces. Cut the scallops in half and then into small pieces.
Step 2
In a small bowl, mix the broth, mirin, and cornstarch.
Step 3
Heat the vegetable oil in a wok over high heat. Add the finely chopped green onions, garlic, and chili flakes. Sauté for 30-45 seconds until fragrant.
Step 4
Add the scallops to the wok and sauté for 2 minutes. Then add the peas and pour in the broth. Cook for another 2-3 minutes until the sauce thickens and the scallops become almost opaque.
Step 5
Stir in half of the chopped basil, divide into small bowls, and sprinkle with the remaining basil.
