  • Smoked haddock fillet 2 pieces
  • Meyer Lemon Juice 1½ tablespoons
  • Olive Oil 2½ tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Arugula 5 oz
  • Marinated cherries 5 oz
  • Spanish onions 0 oz
  • Red Wine Vinegar 1 tablespoon

Step-by-Step Guide

Step 1

Place the fish in a bowl and add lemon juice, 1.5 tablespoons of olive oil, salt, and pepper. Mix well and let it sit for 15 minutes.

Step 2

Heat a large skillet over medium heat and fry the fish for about 2-3 minutes, then flip, slightly reduce the heat, cover, and cook the fish until done for another 3-4 minutes for medium doneness.

Step 3

Meanwhile, in a small bowl, mix the arugula, halved cherry tomatoes, and thinly sliced onion. Before serving, drizzle with the remaining olive oil, vinegar, and sprinkle with salt and pepper. Mix well and plate. Top with the fish and serve.
