  • Salmon bellies 2 pieces
  • Brussels Sprouts 10 oz
  • Onion 1 piece
  • Olive Oil 4 tablespoons
  • Meyer Lemon Juice 1 tablespoon
  • Balsamic Vinegar 1 tablespoon
  • Dijon Mustard 1 teaspoon
  • Toasted Sesame 1 teaspoon
  • Cayenne Pepper to taste
  • Saffron a pinch
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F. Season the fish with salt and pepper, and fry it over high heat in a small amount of olive oil for 2 minutes on each side. Transfer to a baking dish skin side down and place in the preheated oven for 5 minutes (or a little longer, until cooked through).

Step 2

Cut the Brussels sprouts in half and sauté in olive oil for about 5 minutes, add the sliced onion and vinegar, season with salt, and cook for another 5–7 minutes, stirring constantly.

Step 3

Mix all the sauce ingredients: 3 tablespoons of olive oil, mustard, sesame seeds, saffron, cayenne pepper, and salt. Drizzle over the cooked fish before serving.
