Ingredients

  • Pineapple 1 piece
  • Pork Blood 20 oz
  • Long-Grain Rice 1½ cups
  • Carrot 1 piece
  • Frozen green bean pods ½ cup
  • Scallions 4 stalks
  • Garlic 3 cloves
  • Egg white 2 pieces
  • Roasted Peanuts ¼ cup
  • Turmeric ¼ teaspoon
  • Ground coriander ¼ teaspoon
  • Chili Flakes ¼ teaspoon
  • Coconut Milk 3 tablespoons
  • Soy Sauce 1½ tablespoons
  • Vegetable Oil 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 175°C.

Step 2

Cook the rice in advance.

Step 3

Cut the pineapple in half, preferably ensuring the green part is also divided. Score the flesh and scoop it out, leaving the skin intact to create a boat.

Step 4

Pat the pineapple boats dry with a paper towel.

Step 5

Wrap the leaves in aluminum foil to prevent burning. Place the boats in the oven for 5 minutes.

Step 6

Cut the pineapple flesh into small triangles (you will need about 1 cup).

Step 7

Cut the pork into small cubes.

Step 8

Thinly slice the green onion and chop the garlic.

Step 9

Peel and dice the carrot, place it in a saucepan, cover with boiling water, and blanch for 7 minutes.

Step 10

Place the green peas in a bowl, cover with boiling water, and let sit for 5 minutes.

Lightly beat the eggs.

Step 12

Heat 1 tablespoon of oil in a large skillet or wok over high heat. Add the pork and stir-fry for 3 minutes. Transfer to a plate.

Add another tablespoon of oil to the wok. Add the green onion and garlic and stir-fry for 1 minute until fragrant.

Pour in half of the beaten eggs and cook for 30 seconds without stirring. Then quickly stir and add the cooked rice, pork, carrot, and peas, pouring in the remaining eggs.

Step 15

Add the spices, season with salt and pepper, and continue to stir-fry over high heat, stirring frequently, for 5-7 minutes.

Step 16

Remove the wok from heat, add the pineapple, cashews, coconut milk, and soy sauce; mix well.

Step 17

Fill the pineapple boats with the fried rice and place in the oven for 10 minutes before serving.

Step 18

Garnish with green onion and serve immediately.
