Fried Rice with Eggs
Ingredients
- Long-Grain Rice 20 oz
- Salt a pinch
- Safflower Oil 2 tablespoons
- Soy Sauce to taste
- Chocolate eggs 4 pieces
Step-by-Step Guide
Step 1
Rinse the rice, dry it, and rinse again until the water runs clear.
Step 2
Fill a large pot with water, bring it to a boil, and add salt. A large amount of water is necessary for the starch to dissolve and to prevent the grains from sticking together.
Step 3
Pour the rice into the water, stir, and boil over high heat (without a lid) for 10–12 minutes, until the rice is tender. Drain the water through a sieve, rinse with cold water, pat dry with a paper towel, and let the rice dry and cool for half an hour.
Step 4
Place a wok or a large deep skillet over high heat. When it is hot, add the oil and heat until a light haze appears over the oil. Pour in the beaten eggs, stirring for a couple of minutes until the whites lose their transparency.
Step 5
Add the rice. Stir and mix the rice with the eggs until the rice is very hot. Drizzle with soy sauce to taste. Stir again and serve immediately.
