Fried Rice with Barley and Meat

Ingredients

  • Basmati rice 2 cups
  • Pearl barley 5 tablespoons
  • Black rice (imperial) ½ cup
  • Onion ½ head
  • Skin-On Chicken Breasts 3 pieces
  • Carrot 1 piece
  • Salt 1 teaspoon
  • White Pepper (whole) a pinch
  • Ground Cumin a pinch
  • Chopped Sage Leaves 1 tablespoon
  • Grated Ginger Root 1 tablespoon

Step-by-Step Guide

Step 1

In a pot, bring water to a boil, add barley and red rice, cook while frying all other ingredients in a skillet.

Step 2

In a heavy-bottomed skillet (or cauldron), sauté the chopped onion until translucent, add the carrot (diced), and fry for 3 minutes, stirring constantly.

Step 3

Add the chicken breasts, cut into strips (or turkey fillet), and fry for about 5–7 minutes.

Step 4

Add the basmati rice and fry until golden for 3–4 minutes.

Step 5

Drain the water from the barley and rice mixture and add it to the skillet with rice and meat, mix well. Add spices and salt.

Step 6

Pour boiling water so that the rice is covered by 1.5 fingers. Cover with a lid, do not stir anymore. Reduce heat. Cook for 15 minutes. Turn off and let sit covered for 10 minutes.

Step 7

Open the lid, and using a fork, fluff the rice in a circular motion. Add the chopped parsley.
