Fried Rice Noodles
Ingredients
- Rice Noodles 5 oz
- Sesame Oil 2 tablespoons
- Large Chicken Eggs 2 pieces
- Ground White Pepper ¼ teaspoon
- Asparagus 10 oz
- Snap Peas 5 oz
- Minced garlic 3 cloves
- Vegetable Broth ¾ cup
- Soy Sauce 2 tablespoons
- Sriracha 2 teaspoons
- Leek 3 stalks
Step-by-Step Guide
Step 1
Soak the rice noodles in hot water for 8 minutes. Drain the water.
Step 2
Meanwhile, heat 1 teaspoon of oil in a non-stick skillet over medium heat.
Step 3
In a small bowl, whisk the eggs with 2 teaspoons of water and white pepper.
Step 4
Pour the eggs into the skillet, tilting the skillet to coat the bottom.
Step 5
Cook for 1-2 minutes, then carefully flip the omelet and cook for another 1-2 minutes.
Step 6
Transfer the omelet to a cutting board and slice into strips.
Step 7
Heat the remaining oil in the skillet, add the asparagus and peas.
Step 8
Stir-fry for 3-4 minutes, constantly stirring, then add the garlic and cook for another minute.
Step 9
Mix the broth, soy sauce, and sriracha. Pour the mixture into the skillet and bring to a boil.
Step 10
Add the noodles and cook for 3-5 minutes until the liquid is absorbed. Toss with the omelet strips and leek.
