
Fried Quail with Waffles and Maple Syrup

Ingredients
- Butter 5 oz
- Mild Chili Spice 0 oz
- Maldon Salt a pinch
- Quail Egg 4 pieces
- Coarse Salt to taste
- 33% Cream 10 fl oz
- Wheat Flour 15 oz
- Ground Breadcrumbs 0 oz
- Paprika 1 tablespoon
- English Dry Mustard 1 tablespoon
- Ground Nutmeg 0 oz
- Vegetable Oil to taste
- Waffle 4 pieces
- Maple syrup 5 fl oz
Step-by-Step Guide
Step 1
Season the quails with salt, place them in a bowl, and pour cream over them.
Step 2
In a separate bowl, combine the flour, breadcrumbs, paprika, mustard, nutmeg, and a tablespoon of coarse salt. Transfer the mixture to a large paper bag, add the quails after shaking off any excess cream, and shake the bag to coat the birds evenly with the flour mixture.
Step 3
In a saucepan (or steel pot), pour in oil to a depth of 10–15 cm. Heat it up and place the quails in the bottom, adding 20 grams of butter. Fry until golden and crispy, about two minutes on each side.
Step 4
Toast the waffles and spread them with a mixture of butter and hot red pepper. Serve the quails with the waffles, drizzled with syrup.
