Fried Pumpkin

Ingredients

  • Salt to taste
  • Garlic 3 cloves
  • White bread 4 pieces
  • Olive Oil 10 fl oz
  • Pumpkin 5 lbs
  • Leek 4 pieces

Step-by-Step Guide

Step 1

Rinse and cut the leek into sticks about 2.5 cm long. Peel the pumpkin and remove the seeds, then cut it into cubes. Trim the crusts off the bread and cut it into cubes as well. Crush the garlic cloves with the flat side of a knife blade.

Step 2

Bring a large pot of salted water to a boil. Add the leek and cook over medium heat for 20 minutes. Then add the pumpkin and cook for another 25 minutes, until it becomes soft – it should be easily pierced with a fork. Drain the water, cover the pot with a lid, and set aside.

Step 3

Heat the oil in a large skillet. Fry the bread cubes, stirring, until they turn golden brown. Remove with a slotted spoon and drain excess oil on a paper towel.

Step 4

Drain most of the oil from the skillet, leaving just enough to cover the bottom. Heat again, add the garlic, and cook for a few minutes until it darkens, then discard. Add the pumpkin, leek, and croutons to the skillet – fry everything together over low heat for 5 minutes. Serve immediately.
