Fried Pike
Ingredients
- Pike 5 lbs
- Bacon 0 oz
- Anchovies 8 pieces
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
- Mustard Greens 1 tablespoon
- Mayonnaise 15 oz
- Capers 1 tablespoon
- Cornichons 3 pieces
- Chopped Sage Leaves 2 tablespoons
Step-by-Step Guide
Step 1
Remove the skin from the pike.
Step 2
Pierce the resulting fillet in several places with a knife and stuff it with pieces of bacon and anchovies.
Step 3
Then wrap the fish in oiled parchment paper or oiled foil. Bake at 390°F for 30 minutes.
Step 4
Place the finished fish on a platter and garnish with lemon slices.
Step 5
Prepare the sauce: blend mayonnaise, capers, cornichons, parsley, and pepper in a blender. Serve separately from the fish.
