Fried maitake mushrooms with chili and cilantro

Ingredients

  • Cilantro leaves ½ cup
  • Vegetable Oil ⅓ cup
  • Dried Arbol Chili Peppers 10 pieces
  • Star anise 8 pieces
  • Ground Ginger 2 tablespoons
  • Minced garlic 1½ tablespoons
  • Soy Sauce ¼ cup
  • Vegetable Broth 2 tablespoons
  • Brown Sugar 1½ tablespoons
  • Shallots 3 heads
  • Fresh Mushrooms 30 oz

Step-by-Step Guide

Step 1

Tear the maitake mushrooms into large pieces about 7-8 cm.

Step 2

Heat the oil in a large wok or high-sided skillet until it starts to smoke. Add half of the chili peppers and star anise and stir-fry, shaking the pan, for about 20 seconds. Place half of the mushrooms in a single layer and fry without turning until caramelized and crispy, about 4 minutes. Shake the pan and continue to fry for another 2 minutes until caramelized and crispy.

Step 3

Using a slotted spoon, remove the mushrooms, chili, and star anise from the wok and transfer to a plate. Place the wok back on the heat and repeat the same steps with the remaining peppers, anise, and mushrooms.

Step 4

Return all the mushrooms, peppers, and anise to the wok, add the ginger and garlic, and stir-fry, shaking the pan, until fragrant, about 30 seconds. Pour in the soy sauce, broth, add the sugar, and simmer, stirring, until the sugar dissolves and the ginger and garlic are tender, about 1 minute. Transfer the mushrooms, spices, and chili to a large serving platter and sprinkle with cilantro and shallots.
