Description
It is best to blanch the beans before frying. The time this process takes depends on the firmness of the beans, whether they are frozen or fresh, and your personal preferences.
Ingredients
- Safflower Oil 5 teaspoons
- Garlic 1 clove
- Chinese green beans 1½ kg
- Salt to taste
Step-by-Step Guide
Step 1
Cut the bean pods. Bring salted water to a boil. Add the beans and bring back to a boil, then cook uncovered for 10-12 minutes, until they are tender. Rinse with cold water. Drain immediately.
Step 2
Heat oil in a skillet, add roughly chopped garlic, and cook for a few minutes until it turns slightly brown. Remove the garlic. Add the beans to the skillet and stir-fry quickly to prevent the pods from breaking apart or burning. Serve immediately.
