  • Courgette 4 pieces
  • Skin-On Chicken Breasts 4 pieces
  • Garlic 4 cloves
  • Olive Oil 1 tablespoon
  • Thyme 8 stalks
  • Meyer Lemon Juice 1 tablespoon
  • Parsley 0 oz
  • Leek 1 piece
  • Vegetable Oil 0 fl oz
  • Celery stalk 1 piece
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Grate the zucchini using a grater, mandoline, or food processor. Aim for the shreds to resemble spaghetti in shape.

Step 2

Grill the chicken breast in vegetable oil until browned. Transfer it to a baking tray, and on the same tray, add chopped leeks and celery. Season the chicken with salt and pepper, add sprigs of thyme, and place it in an oven preheated to 390°F for fifteen minutes.

Step 3

Sauté the zucchini spaghetti in olive oil with garlic and chopped parsley until the zucchini is tender. Once soft, pour lemon juice into the pan, stir, season with salt and pepper, remove from heat, and serve with the chicken.
