Fried Chicken with Fruits
Ingredients
- Olive Oil 3 tablespoons
- Skin-On Chicken Breasts 6 pieces
- Dried Apricots 5 oz
- Prunes 5 oz
- Garlic 2 cloves
- Brown Sugar 2 teaspoons
- Red Wine Vinegar 4 tablespoons
- Pistachios 0 oz
- Sherry 10 fl oz
Step-by-Step Guide
Step 1
Make three cuts on each piece of chicken. In a deep skillet, heat the olive oil and fry the breasts over high heat for 2 minutes on each side until golden brown. Sprinkle with finely chopped garlic and nuts and fry for another minute until the nuts are toasted.
Step 2
Add sherry, wine vinegar, sugar, and finely chopped dried apricots and prunes to the skillet. Cook for about 20 minutes — until the chicken is cooked through — turning once. Serve with rice drizzled with the sauce from the skillet.
