Fried Chicken with Corn Salad
Ingredients
- Skin-On Chicken Breasts 4 pieces
- Garlic 2 cloves
- Paprika 1 tablespoon
- Meyer Lemon Juice 0 fl oz
- Olive Oil 2 tablespoons
- Corn Cobs 0 oz
- Eel 5 oz
- Courgette ½ piece
Step-by-Step Guide
Step 1
Cut the chicken breasts in half lengthwise to make 8 strips. Mix garlic, paprika, lemon juice, and 1 tablespoon of oil with the spices and toss with the chicken. Let marinate for 15 minutes.
Step 2
Heat a skillet and brush with oil, fry the chicken for 3–4 minutes on each side until cooked through. Brush the skillet with the remaining oil and sauté the corn cobs for 5 minutes. Remove the kernels.
Step 3
Mix the lettuce leaves and cucumber, then top with corn and chicken.
