Ingredients
- Vegetable Oil 2 tablespoons
- Chicken fillet 15 oz
- Shallot 1 head
- Minced garlic 3 tablespoons
- Mild Chili Spice 3 pieces
- Fish Oil 2 tablespoons
- Soy Sauce 2 teaspoons
- Sugar 2 teaspoons
- Fresh basil leaves 20 pieces
Step-by-Step Guide
Step 1
Heat the wok well and add 1 tablespoon of vegetable oil. Place the cut chicken pieces in and fry over high heat for 8-10 minutes until golden brown. Use a slotted spoon to transfer to a plate.
Step 2
Reheat the wok and add the remaining oil. Sauté the garlic and the thinly sliced shallot over high heat for 3 minutes until golden.
Step 3
Return the chicken to the wok and add the sliced chili, fish sauce, soy sauce, and sugar. Fry over high heat for 8-10 minutes until the chicken is cooked through. Add the basil leaves, stir, and serve.
