Fried Chicken Offal
Ingredients
- Chicken Liver 5 oz
- Chicken gizzards 5 oz
- Chicken hearts 5 oz
- Onion 1 head
- Garlic 1 clove
- Butter ½ tablespoon
- Vegetable Oil ½ tablespoon
- 10% cream 0 fl oz
- Chopped Green Onions 1 teaspoon
- Chopped Sage Leaves 1 tablespoon
- Salt to taste
- Sugar a pinch
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the gizzards and hearts separately in broth with roots. Drain the broth.
Step 2
Chop the onion and garlic, sauté until golden in a mixture of vegetable oil and butter. Add the liver and fry. Only after that, add the hearts and gizzards. Mix everything and pour in the cream. When the cream evaporates, season with salt, sugar, and pepper.
