Ingredients
- Clarified Butter 5 oz
- Poultry 5 lbs
- Salt to taste
- Ground Black Pepper to taste
- Meyer Lemon Juice to taste

Step 1
Mix salt, butter, and lemon juice, and rub the inside of the prepared chicken carcass (if the bird is old and not fatty enough, you can attach 1-2 slices of bacon to the upper part of the back and place finely chopped bacon in the belly).
Step 2
In a suitable container, heat half of the butter, place the chicken inside. Pour the remaining butter over it and fry in a preheated oven for about 15 minutes, periodically adding broth.
Step 3
Remove the chicken, which has been browned on both sides until a pink crust forms, and cut it into portions. Serve with a complex garnish and salad depending on the season.
