Step-by-Step Guide
Step 1
Clean, wash, and slice the chanterelles. Cut the caps lengthwise and the stems crosswise.
Step 2
Place the chanterelles in a preheated skillet (dry, without oil) and fry over high heat.
Step 3
During frying, the chanterelles release a lot of moisture, so at some point, they start to boil rather than fry.
Step 4
While the moisture evaporates, chop the onion and potatoes. Slice the onion into half-rings and the potatoes into sticks.
Step 5
When the bottom of the skillet becomes dry, add oil, onion, and potatoes, season with salt, stir the mixture, reduce the heat to medium, and cover the skillet. Alternatively, you can leave it uncovered and stir occasionally. Do what you prefer.
Step 6
Fry until the potatoes are cooked. This takes about 15–20 minutes. After that, add half a cup of sour cream, mix, turn off the heat, and let it sit covered for 5–7 minutes.
