Ingredients

  • Butternut Squash 1 piece
  • Courgette 1 piece
  • Sweet Corn Sticks 1 piece
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Tortillas 4 pieces
  • Black Tomatoes 2 cans
  • Rice to taste
  • Tomatoes 2 pieces
  • Onion 2 heads
  • Sour Cream 2½ tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to medium temperature.

Step 2

Peel the squash and zucchini. Cut the butternut squash and zucchini in half, mix with corn and olive oil, and season with salt and pepper.

Step 3

Place everything in the oven; the vegetables should become soft.

Step 4

Warm the tortillas in the microwave, and lightly sauté the black beans in a pot, mashing them slightly with a fork.

Step 5

For the burritos, you will need some rice, the bean puree you made, and diced vegetables.

Step 6

Place all of this in the center of the tortilla.

Step 7

Sprinkle with grated cheese, add tomatoes, and top with finely chopped onion.

Step 8

Don't forget to add sour cream for extra flavor. Fold the ends of the tortilla, and there you have it—a delicious dish ready to enjoy!
