Fried Bonito Tuna with Green Mayonnaise
Ingredients
- Chicken Egg 6 pieces
- Breadcrumbs 5 oz
- Cotton Oil 0 qt
- Bonito tuna fillet 5 lbs
- Salt to taste
- Parsley 4 stems
- Lemon 1 piece
- Chopped Sage Leaves 2 tablespoons
- Capers 4 tablespoons
- Cornichons 7 pieces
Step-by-Step Guide
Step 1
Prepare the green mayonnaise by blending 4 eggs, lemon juice, corn oil, parsley, capers, cornichons, and salt to taste, then refrigerate.
Step 2
Take two small plates — beat 2 eggs in one, and place the breadcrumbs in the other. Heat the oil in a pan to 180–375°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds). Lightly season the fish with salt, dip it in the egg, and coat it with breadcrumbs, pressing slightly to prevent the crumbs from falling off.
Step 3
Fry the fish in batches until golden brown. Remove the cooked tuna from the pan, drain, and keep warm while frying the others. Garnish with parsley and serve with the green sauce.
