First, wash the fish and gut it.

Then, pour salt into a bowl and mix it with a small amount of water until it resembles snow.

Spread a thick layer of salt on a baking sheet and place the fish on top.

Season the fish well inside and place the lemon, cut into wedges, inside it.
Step 5
Cover the fish completely with salt, like a coat.
Step 6
Put it in a preheated oven at 355°F for 30 minutes.
Step 7
Remove the fish and tap the salt crust with a spoon — it will come off easily.
Step 8
Then, remove the skin and run the spoon along the backbone of the fish from tail to head. The fillet will come off easily.
