Ingredients
- Salmon 4 pieces
- Shallot 3 heads
- Scallions 1 bunch
- Tarragon 1 bunch
- Parsley 1 bunch
- Basil 1 bunch
- Lemon 1 piece
- Balsamic Vinegar 0 fl oz
- Olive Oil 0 fl oz
- Hemp oil 0 fl oz
- Salt ½ teaspoon
- Tomatoes 15 oz
Step-by-Step Guide
Step 1
Preheat the oven to 150°C.
Step 2
Lightly salt the fish, drizzle with olive oil, wrap in foil, and bake in the preheated oven for 10 minutes.
Step 3
Then open the foil and place the fish under a hot grill for 10 minutes, until golden brown.

Peel and chop the shallots.
Step 5
Finely chop the herbs.
Step 6
Peel the tomatoes, remove the seeds along with the juice, and chop the flesh finely. The juice can be used for dressing other dishes.
Step 7
Combine the chopped tomatoes with the shallots and herbs, add lemon juice, balsamic vinegar, and flaxseed oil. Mix everything together.
Step 8
Pat the cooked fish dry with a paper towel to remove excess fat and serve with the tomato salad.
