French-Style Eggplant
Ingredients
- Eggplants 15 oz
- Parmesan Cheese 0 oz
- Tomatoes 5 oz
- Mayonnaise 3½ tablespoons
- Garlic 0 oz
- Olive Oil 1½ tablespoons
- Ocean salt to taste
- Herbes de Provence ½ teaspoon
- Lemon-Pepper Mix to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Slice the eggplant into thick slices.
Step 2
Heat 1 tablespoon of oil in a skillet over high heat.
Step 3
Add the eggplants and sauté for 2–3 minutes.
Step 4
Drizzle olive oil over the eggplants.
Step 5
Flip, season with salt and pepper. Sauté for another 2 minutes.
Step 6
Place the eggplants on a baking sheet lined with parchment paper.
Step 7
For the sauce, mix mayonnaise and herbs de Provence.
Step 8
Press garlic into the sauce using a garlic press.
Step 9
Mix thoroughly.
Step 10
Slice the tomatoes thinly.
Step 11
Season with salt.
Step 12
Layer the tomatoes on top of the eggplants.
Step 13
Spread the sauce on top.
Step 14
Sprinkle grated cheese. Place in an oven preheated to 355°F for 15 minutes.
Step 15
Transfer to a serving dish and serve with fresh herbs.
