Ingredients
- Eggplants 2 pieces
- Tomatoes 4 pieces
- Young zucchini 2 pieces
- Onion 2 pieces
- Salad Potatoes 10 oz
- Garlic 3 cloves
- Herbs to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
- Ground ancho chili pepper to taste
- Grated Pecorino Pepato Cheese to taste
- Breadcrumbs to taste
Step-by-Step Guide
Step 1
Slice the eggplants into rounds.
Step 2
Salt the eggplants and let them sit for about 20 minutes. After this, the eggplants will lose their bitterness. After 20 minutes, rinse the eggplants.
Step 3
Slice the zucchini, tomatoes, potatoes, and onions into rounds as well.
Step 4
Grease a baking dish with oil and layer the vegetables, alternating eggplants, tomatoes, onions, zucchini, and potatoes.
Step 5
Sprinkle the vegetables with salt, pepper, herbs, and garlic.
Step 6
Bake the dish in the oven at 180–375°F until the potatoes are soft. By this time, the eggplants and zucchini should be golden brown.
Step 7
A crispy crust can add a special zest to the dish. To achieve a crispy crust on top of the vegetables, sprinkle the finished dish with breadcrumbs and grated cheese and bake until a golden crust forms!
