Ingredients

  • Salad Potatoes 4 pieces
  • Butter 0 oz
  • Grated Pecorino Pepato Cheese 0 oz
  • Red Long Chili Peppers 1 teaspoon
  • Chopped Sage Leaves ½ teaspoon
  • Garlic 3 cloves
  • Salt ½ teaspoon
  • Whole egg 1 piece
  • Mustard Greens 1 teaspoon
  • Vegetable Oil ½ cup

Step-by-Step Guide

Step 1

Heat the oil to 320°F either in a deep fryer or in a large pot. The oil should completely cover the potatoes.

Step 2

Mix all the seasoning ingredients and set aside for a while.

Step 3

Prepare the garlic sauce. Crush the garlic cloves with the side of a large knife. Sprinkle with salt and mash the garlic into a paste with the knife. Transfer to a bowl, mix with the yolk and mustard. Stir well. Gradually pour in the oil and mix until creamy.

Step 4

Cut the potatoes into thin strips. Dry them with paper towels. Fry the potatoes in small batches for 4 minutes. The potatoes will not be crispy yet. Transfer to a paper towel to remove excess fat. Increase the oil temperature to 375°F. Once the oil is ready, fry the potatoes again until they are crispy and golden brown. Remove from the oil and pat dry with a towel. Immediately salt. Sprinkle with the prepared seasoning with cheese and red pepper. Serve with garlic sauce.
