French Duck Breast
Ingredients
- Duck Breast 1 piece
- Thyme 1 sprig
- Garlic 3 cloves
- Ocean salt to taste
- Lemon-Pepper Mix to taste
- Potato 1 piece
- Microgreens to taste
Step-by-Step Guide
Step 1
Score the skin of the duck breast diagonally all around.
Step 2
Salt both sides.
Step 3
Place on a dry, hot skillet, reduce heat to medium after 1 minute. Sear for 7–8 minutes until golden brown.
Step 4
Peel the garlic.
Step 5
Crush the garlic with a knife and add it to the rendered fat.
Step 6
Add thyme. Baste with the rendered fat during cooking.
Step 7
Flip and sear for another 3–4 minutes.
Step 8
Season with pepper.
Step 9
Transfer the duck and thyme to a baking dish and place in a preheated oven at 320°F (160°C) for 8 minutes.
Step 10
The finished duck can be sliced if desired. Add sliced tomato, garnish with thyme and microgreens. The dish is ready.
