Fragrant Rice with Beans
Ingredients
- Spanish onions ½ head
- Vegetable Oil 2 tablespoons
- Garlic 4 cloves
- Long-Grain Rice 2 cups
- Salt 1 teaspoon
- Water 1 cup
- Grated Ginger Root 1 teaspoon
- Chicken Broth 1 cup
- Coconut Milk 2 cups
- Canned Pork with Beans 15 oz
- Dried Chamomile 2 teaspoons
- Habanero Pepper 1 piece
- Lime to taste
Step-by-Step Guide
Step 1
Heat the vegetable oil in a deep skillet over medium heat and sauté the finely chopped onion for 4–5 minutes until golden brown.
Step 2
Add the minced garlic and rice, mix well and sauté, stirring, for 2–3 minutes.
Step 3
Add the ginger and salt, pour in the water, coconut milk, and broth, and mix. Then add the beans, thyme, and whole pepper. Bring to a boil, reduce the heat, cover, and cook for 15–20 minutes until the rice is done.
Step 4
Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork, remove the pepper, and lightly drizzle with lime juice (if desired).
