
Fragrant Pork in the Oven

Description
The simplest dish, which nonetheless requires careful selection of meat — it should be loin or shoulder. Additionally, you will need to calculate the cooking time — the meat must first spend two hours in the refrigerator, followed by two hours in a warm environment, so the delicate olive-lemon-rosemary marinade can fully infuse into the pork.
Ingredients
- Pork Blood 0 lbs
- Olive Oil 3 spoons
- Ground Dried Garlic 1 tablespoon
- Rosemary 1 piece
- Citrus Zest Mix 1 piece
- Ocean salt 1 tablespoon
- Green peppercorns 1 tablespoon
- Ground coriander 1 tablespoon
Step-by-Step Guide
Step 1
In a mortar, grind the rosemary with pepper and salt.
Step 2
Add the zest, garlic, coriander, and olive oil (if you don't have dried garlic, you can crush a couple of cloves). Mix well.
Step 3
Rinse the pork and pat it dry. If there is a layer of fat, make crisscross cuts with a knife. Rub the pork with the spice mixture.
Step 4
Wrap the meat in plastic wrap and place it in the refrigerator for 2 hours.
Step 5
Take it out 2 hours before baking and let it sit at room temperature.
Step 6
Preheat the oven to 390°F. Unwrap the pork and place it in a roasting bag, sealing it tightly. Make several small holes in the bag. Roast in the preheated oven for 15 minutes.
Step 7
Reduce the temperature to 340°F and bake until done, approximately one hour.
Step 8
For the side dish, you can mix the vegetables (broccoli florets, zucchini, bell peppers, mushrooms, and cherry tomatoes) separately with olive oil and spices, and spread them on a baking tray when there are 35–40 minutes left for the meat to cook.
