Step 1
Boil vinegar with 2 bay leaves, 7 allspice berries, 1 clove, 2 bulbs of onion, and a small amount of cinnamon.
Step 2
Remove the skin from the 1 kg piece of pork, rub it with salt, and place it in the prepared marinade for a week. Then remove, squeeze out excess liquid, stuff with 10 cloves and cinnamon, and roast on a baking sheet in the oven, first basting with water, then with the juice released by the pork. About half an hour before it's done, sprinkle with grated black bread and finely chopped lemon zest (1/4 tablespoon) and let it finish cooking without basting with juice.
