- Mayonnaise 4 tablespoons

Take a small, lean duck, approximately 2 kg. Cut it into portion-sized pieces (you will get about 12 small pieces).
Step 2
Season with salt and pepper, coat with mayonnaise, squeeze the head of garlic, and rub the pieces of duck. Let it sit in a warm place for 2 hours, then refrigerate for a day.
Step 3
Bake in the oven in a high-sided baking dish, covered with foil, for 2 hours at 355°F, adding a little water to the dish. The duck comes out tender, soft, and with a pleasant garlic aroma.
