Fragrant couscous with vegetables
Ingredients
- Orange zest ½ teaspoon
- Olive Oil 1 tablespoon
- Chicken Broth 15 fl oz
- Cinnamon a pinch
- Ground Black Pepper ¼ teaspoon
- Salt ¼ teaspoon
- Carrot 2 pieces
- Scallions to taste
- Couscous 5 oz
Step-by-Step Guide
Step 1
Place a three-liter skillet over medium heat and heat the olive oil (or vegetable oil) in it. Add 3 sprigs of finely chopped green onion, diced carrot, ¼ teaspoon of salt, and ¼ teaspoon of freshly ground black pepper. Sauté, stirring frequently. The vegetables should become tender-crisp. Add ground cinnamon (about ⅛ teaspoon).
Step 2
Pour the chicken broth over the vegetables, stirring. Bring to a boil over high heat. Add the couscous and mix well. Cover the skillet with a lid and remove from heat. Let it sit for about 5 minutes.
Step 3
Fluff the couscous with a fork. If desired, add the grated orange zest.
