
Fragrant Chicken with Italian Potatoes

Description
Instead of thighs, you can use chicken drumsticks. It's better to use green olives.
Ingredients
- Scallions 1 bunch
- Chicken Thighs 5 lbs
- Olive Oil 1 tablespoon
- Salad Potatoes 20 oz
- Garlic 4 cloves
- Dried Rosemary 2 teaspoons
- Chopped Sage Leaves 1 tablespoon
- Olives stuffed with lemon 1 cup
- Meyer Lemon Juice 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Marinate the chicken with salt and freshly ground black pepper.
Step 2
Pour oil into a large non-stick skillet and fry the chicken over high heat on both sides until golden brown, about 2 minutes.
Step 3
Mix the chopped onions, halved potatoes, minced garlic, rosemary, and oregano.
Step 4
Place everything in a baking dish.
Step 5
Top with chicken thighs, skin side up, and drizzle with lemon juice, then add the olives.
Step 6
Cover the dish with a lid or foil and bake in a preheated oven at 355°F for 1.5 hours.
