
Forest Mushroom Stew

Description
Serve with toast, roasted meat, or spooned over pasta.
Ingredients
- Fresh Mushrooms 20 oz
- Butter 1 tablespoon
- Shallot 2 pieces
- Garlic 1 clove
- Chicken Broth ¾ cup
- Cream (40%) ¼ cup
- Thyme 2 sprigs
- Chives 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Trim the stems from the mushrooms. Cut the caps into small pieces.
Step 2
In a skillet over medium heat, melt the butter and add the finely chopped shallots and minced garlic. Sauté, stirring, until soft, about 15 minutes.
Step 3
Add the chopped mushroom caps and cook until all the liquid has evaporated.
Step 4
Pour in the broth and cook for another 5 minutes.
Step 5
Add the cream and cook for another 5 minutes.
Step 6
Add the thyme sprigs and chopped chives. Season with salt and pepper.
